A Chinese food blogger known for unconventional creations has gone viral on social media after preparing fried chicken pieces that appear semi-transparent, resembling glass sculptures.
According to details, the blogger, Cai Nan, is known for unusual and inventive dishes made using complex techniques of Molecular Gastronomy. His latest creation, semi-transparent fried chicken, appears more like an artwork than food.
Last month, he uploaded a video on his YouTube channel titled “I want to make transparent fried chicken, but the result was unusual.” The video gained remarkable attention and received nearly one million views on the platform owing to its uniqueness.
The idea of making fried chicken transparent, or even semi-transparent, appears unusual. The final result looks striking, while the creator explains the process in detail.
Cai Nan’s transparent chicken appears astonishing, thought-provoking and, at the same time, unsettling. The unusual dish has drawn curiosity from some viewers, while others have expressed reluctance to try it.
In the viral clip, he said the process involved breaking down fried chicken and reconstructing it, beginning with the bones. He used a mixture of bone marrow, collagen and cold gel, poured into moulds shaped like chicken bones and left to set.
For the meat, he first used a device to turn chicken flesh into a liquid form. He then applied a spherification technique to restore the structure of muscle fibres, commonly used in molecular gastronomy. Finally, the glass-like meat and bones were placed into another mould and assembled.
He also recreated the crispy outer layer of traditional fried chicken, although his version bears little resemblance to the original. While the semi-transparent dish may not appeal to all, it remains visually striking.
